    • ½ teaspoon turmeric powder

    • 1 teaspoon garam masala (optional)

    • 1 teaspoon lemon juice (for added tanginess)

Instructions

  1. Step 1: Prepare the Rice and Dal

    • Rinse the Rice and Dal: Start by rinsing the rice and moong dal under cold running water until the water runs clear. This helps remove excess starch and makes the khichdi lighter.

    • Soak (Optional): You can soak the rice and dal in water for about 20-30 minutes to reduce cooking time, but this is optional.

  2. Step 2: Sauté the Ingredients

    • Heat Oil/Ghee: Heat the ghee or oil over medium heat in a large pot or pressure cooker.

    • Add Cumin Seeds: Once hot, add cumin seeds and let them splutter.

    • Sauté Onions: If using, add the chopped onions and sauté until they turn translucent.

    • Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant.

    • Add Tomatoes: Now, add the chopped tomatoes and cook until they become soft and mushy, around 3-4 minutes. You can also add salt at this stage to help the tomatoes break down faster.

  3. Step 3: Cook the Khichdi

    • Mix in the Rice and Dal: Add the rinsed rice and dal to the pot, stirring well to combine everything.

    • Add Spices: Sprinkle turmeric powder and any additional spices you like. Mix well.

    • Add Water: Pour in the water and stir. Ensure there are no lumps.

    • Pressure Cook: If using a pressure cooker, close the lid and cook for 3-4 whistles on medium heat. If cooking in a regular pot, cover and simmer for about 20-25 minutes, or until the rice and dal are fully cooked and soft.

  4. Step 4: Final Touches

    • Check Consistency: Once cooked, open the lid and stir the khichdi. If it’s too thick, you can add a little more water to reach your desired consistency.

    • Add Garam Masala and Lemon Juice: Stir in the garam masala and lemon juice, adjusting seasoning as needed. Cook for an additional 2 minutes to blend the flavors.
