Ingredients You’ll Need:

  • One cup of rice flour is the recommended amount.

  • Half a cup of all-purpose flour is required.

  • Half a cup of water is the recommended amount.

  • 1/4 teaspoon of baking soda is the recommended dosage.

  • Get the oil ready for deep-frying.

  • One cup of sugar should be used.

  • You will need half a cup of water for the sugar syrup.

  • Add a pinch of cardamom powder if desired.

Steps you need to follow:

  1. Step 1: Make the Batter

    • In a mixing bowl, put all-purpose flour and rice flour.

    • Add water gradually to the flour mixture, stirring constantly. The batter should be thick and consistent just like pancake batter.

    • Just before frying, pinch a little baking soda into the batter. So, the Jhilli will puff up during frying.

  2. Step 2: Heat the Oil

    • Take a deep frying pan, add some oil, and heat it up on a medium flame.

    • Test the readiness of the oil by dropping a small portion of the batter into it. If it floats to the top right away, the oil is ready for frying.

  3. Step 3: Fry the Jhilli

    • Add small portions of the batter drop by drop into the hot oil by your fingers or a spoon

    • Fry until golden and crispy, turning occasionally to ensure uniform cooking.

    • Once ready, remove them from the oil and place them on paper towels for excess oil absorption.

  4. Step 4: Sugar Syrup Preparation

    • Take a saucepan and add 1 cup sugar, along with 1/2 cup of water, to it. Bring it to a boil, then stir until the sugar dissolves completely.

    • Now, slightly thicken the syrup for two minutes. You can also add a pinch of cardamom powder for more flavour.

  5. Step 5: Steeping the Jhilli in Syrup

    • Dip the deep-fried Jhilli in the sugar syrup and keep them immersed for a couple of minutes so that they can absorb the sweetness.

  6. Step 6: Serving and Enjoying

    • Once well-drenched, place the Jhilli on a serving plate.

    • Serve your delicious homemade Jhilli on family get together or relish it as dessert anytime!
